I guess I'm doing recipes now on this blog... Anyway I hope this new category inspires you with simple vegan ideas to cook, none of the recipes should take more than 30 minutes and they will be scaled for a single serving. Also I'm not getting a commission from the links, it's just products I think work well.

Ingredients

  • 10 green asparagus (ca. 300g)

  • 3 potatoes

  • 3-4 tbsp. Soy Yogurt

  • Herbal Seasonings

Preparation

  1. 1.

    Peel and start boiling the potatoes (~15 minutes).

  2. 2.

    Wash the asparagus and break off the ends (they should snap at about the right place). Dry it afterwards.

  3. 3.

    Fry the asparagus in olive oil for about 8 minutes on medium-high heat.

  4. 4.

    For the sauce, take 3-4 tablespoons of yoghurt and add some herbal seasoning, for example parsley works well.

    Add salt & pepper as needed.
